Very Sharp
The Clauss 2.5" Paring Knife is a wonderful addition to my knife drawer. Many years ago I had a paring knife but it disappeared and I always meant to replace it. This new knife is perfect, especially if you have small hands. I find it very easy to control and it has kept its sharp edge for several weeks now. I use it mainly for peeling potatoes, but it is also good for cutting fat off of meat without losing any of the meat and for slicing cheese. This knife has a textured anti-bacterial treated handle which fits well in my hand and doesn't get slippery when it gets wet. I am very pleased to receive this item free in exchange for my honest review.

Sharp and curved Paring Knife
Great paring knife for small items. Curved which helps and small but nice grip handle.
Very and almost deceptively sharp. I found that this was better for certain produce such as tomatoes, mangoes and other various produce but not good for extra soft produce; as those items seemed to squish in my hands before cutting properly.
I would like a bit more of a curve to the blade, this curve helps but it is so slight it is almost pointless. Other paring knives I have used with curves have a nice arch but fail on all the other qualities that this knife has. I like the grip texture, it does not get slippery when wet with water or produce, it has antimicrobial protection, and titanium bonded blade making harder and stays sharper longer.

Small but mighty
This is my new favorite knife in the kitchen.
The hawk bill shape and the wickedly sharp blade will allow you to expertly slice and dice almost anything you need to.
Every new Clauss knife is a massive asset to my kitchen, hands down my favorites. They beat out much more expensive knives in comfort, sharpness, edge retention, and resilience.
For a quarter the cost.

The Handle is perfect
A pairing knife is such a small thing that it is usually overlooked in the kitchen. This knife is perfect for my needs. The knife feels natural in my hand. The handle material is just grippey enough. It does not slip when wet or when my hands are greasy. It feels safe and gives me confidence to make fine cuts.

Great non slip handle.
This paring knife is the perfect size. The non slip handle is the best. My hands are continually wet when I am peeling fruits and vegetables. I haven't had any issues with slipping. Great product.
